Beef is clean meat that can be eaten raw. But the dishes from it are extremely tasty and satisfying. Let’s explore some of them! First, you need to understand what kind of meat is best to pick for cooking. It all depends on the dish: some of them require the meat to be infused at a certain temperature and slightly dried. To be more precise, to prepare a steak, different parts of the beef are defended at a certain temperature in special rooms. At the same time, the meat becomes softer and more pliable for heat treatment. Very rarely, steaks are prepared from fresh cuts of beef.
Hungarian goulash
This is a dish of nomadic Magyars who came to the territory of modern Hungary. Naturally, in order to travel long distances, to drive cattle and, moreover, to fight, we needed strength. They were given hearty and high-calorie food. Of course, there is the traditional goulash recipe, which was prepared without the addition of many modern products and was more like a kind of stew that was cooked for a long amount of time. And it was not always enough to cook food. Therefore, for example, once a week the nomads stopped for several days and cooked goulash in large cauldrons. By the way, the cauldron itself came to Europe with them.
Have to take:
- 1 kilogram of beef’s back;
- 1 kilogram of potatoes;
- 1 kilogram of tomatoes;
- 400 grams of red wine;
- 1 kilogram of bell pepper;
- 1 kilogram of potatoes;
- 4 tablespoons of paprika;
- 10 cloves of garlic;
- ground black pepper;
- salt to taste;
- one chilli pepper;
- parsley;
- Dill;
- cilantro;
- coriander.
It is necessary to cut the beef into portioned pieces (about 4 centimetres one piece) and fry over high heat. We take out the fried meat and throw in the onion, which is cut into rings. At the same time, it must be constantly stirred. After ten minutes, add paprika and finely chopped garlic. After that, throw in the mashed tomatoes and add 400 grams of red wine. Be sure to salt. Bring to a boil and throw in the meat first, and then the coarsely chopped potatoes. After that, you need to add water, but only so that it slightly covers the potatoes and meat. Reduce the heat to a minimum and simmer for three hours. At the end, add bell pepper and cook for another 7 minutes. Add a whole chilli pepper, coriander, dill, parsley and cilantro. Turn off the fire and let it brew for 30 minutes. Serve with fresh rye bread and vegetables. Be sure to drink dry red wine, as the dish is quite fatty.
Beef stroganoff
What is needed for this:
- 400 g beef,
- 2 onions,
- 200 g sour cream,
- 2 tbsp. tomato paste,
- 1 tbsp. flour,
- 50 ml vegetable oil,
- spices, chopped herbs.
It is necessary to cut the beef into slices, beat off and cut into thin strips again. After that, fry the onion, and when it softens, add flour, sour cream and tomato paste. Separately, fry the beef in small portions so that it does not stew. When the sauce thickens and slightly boils down, you need to put the meat in it and simmer everything together for 3 minutes.
After that, prepare the purée:
You need to take white potatoes for cooking, peel, cut into small slices and throw into boiling water. Cook for 15 minutes. During cooking, add bay leaf, onion, peppercorns and a couple of slices of not crushed garlic. If you have leftover chicken or beef broth, this is the most ideal option. After that, you need the potatoes to stand in water for 1-2 minutes, and then drain the water, but leave a little (10 grams) to mix into a homogeneous mass. Add 30 grams of cream and 200 millilitres of milk. Salt, pepper and other spices – to taste. Knead for five to ten minutes with a special pusher. It is necessary to achieve a homogeneous creamy mass.
The dish is served hot 50/50 – mashed meat.
